NO KNEAD BREAD

A quick and easy recipe for “fool proof” whole wheat bread.. Use your home ground red hard winter wheat berries. 12 cups of flour makes 4 loaves.

 

Pour 5 1/2 cups of warm water into a large bowl.  Add 4 heaping tablespoons of dry yeast.  Allow 10 minutes to proof.

Add 2 heaping tablespoons of sea salt.

2/3 cups of oil.

2/3 cups of honey.

8 cups of flour and mix.  As the mixture starts to pull away from the sides of the bowl, add one or two more cups for a sticky batter.  Various flavorings may be added.  For a Swedish or European touch…(3 Tablespoons of orange zest, basil, tarragon, rosemary, as desired.)

Empty bowl onto a floured surface, oil your hands, and with a knife, divide into four equal parts.  Put in oiled bread pans.  Let rise 45-60 minutes.  Bake at 350 degrees for 45-60 minutes.  Butter the crusts, empty pans to cool, slice to serve.
